The grapes come from a 40-hectare vineyard that has been organically certified for six years.

Col di Sasso is a refined red wine of the Banfi winery and this wine can promotes the Tuscany culture all around. There are used Cabernet Sauvignon and Sangiovese grapes and they macerate for 5-6 days at 24-25°C.This process allows keeping the good color without the production of many tannins and it also keeps the aromatic freshness.

The grapes are hand-picked and carefully selected, put in small plastic crates and dried in ventilated rooms for about three months. When they reach the perfect grade of dryness they are destemmed, pressed and fermented in stainless steel tanks. The fermentation lasts for about 30 days.
